“MEDITERRANEAN SALAD BOWL (EVOO)”
Mediterranean salad bowl
Ingredients:
Base:
- 4 cups lettuce
- 1 cup cherry tomatoes
- 1 medium cucumber, diced
- 1 block (about 4 oz) feta cheese
Spiced Chickpeas:
- 7.05 oz chickpeas (drained)
- ¼ tsp salt and pepper
- 1 tsp cumin
- 1 tsp paprika
- 1 tbsp Bertolli EVOO
Dressing:
- 3 tbsp olive oil
- 1 tbsp lemon juice
- 1 tbsp mustard
- Salt and pepper to taste

Preparation time: 5 minutes
Cook time: 10 minutes
Total time: 15 minutes
- Rinse and dry the chickpeas well. Mix them with the spices and oil. Cook them for 10 minutes in a skillet over medium heat with the lid on, then set aside.
- In a salad bowl, combine the lettuce, tomatoes, cucumber, spiced chickpeas, and crumbled feta cheese.
- Dress the salad with olive oil, lemon juice, mustard, salt, and pepper. Mix and enjoy.
