Mediterranean salad bowl

Ingredients:

Base:

  • 4 cups lettuce
  • 1 cup cherry tomatoes
  • 1 medium cucumber, diced
  • 1 block (about 4 oz) feta cheese

Spiced Chickpeas:

  • 7.05 oz chickpeas (drained)
  • ¼ tsp salt and pepper
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tbsp Bertolli EVOO

Dressing:

  • 3 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tbsp mustard
  • Salt and pepper to taste

Total time: 15 minutes

  1. Rinse and dry the chickpeas well. Mix them with the spices and oil. Cook them for 10 minutes in a skillet over medium heat with the lid on, then set aside.
  2. In a salad bowl, combine the lettuce, tomatoes, cucumber, spiced chickpeas, and crumbled feta cheese.
  3. Dress the salad with olive oil, lemon juice, mustard, salt, and pepper. Mix and enjoy.
