Tempeh and Grilled Mushrooms Salad

Ingredients:
Tempeh and Grilled Mushrooms Salad
Salad greens of your choice
- 1 serving tempeh, cut into long strips
- 1/2 cup mini mushrooms, sliced
- grape tomatoes
- oil for cooking
Dressing:
- 1 tablespoon toasted sesame
- 1 teaspoon minced ginger
- 1/2 tablespoon toasted sesame oil
- 1/2 tablespoon organic sugar
- 1/2 tablespoon soy sauce
- 1-2 tablespoons of Bertolli Extra Virgin Olive Oil
- juice of half lime
- sea salt (optional)
Directions:
- Heat a non-stick pan with 2 teaspoons oil
- Then, pan fry mushrooms and tempeh until cook and crispy
- Set aside
- To make the dressing – mix dressing ingredients in a bowl until well combined
- Season according to your preference
- Place salad greens, grape tomatoes, mushrooms, tempeh in a bowl and drizzle with the delicious dressing before serving
- Enjoy.
Veggie Ravioli

Ingredients:
Veggie Ravioli
- 1-8 oz pack veggie ravioli
- 1/4 cup of Bertolli Extra Virgin Olive Oil
- 2 tsp minced garlic
- 1/2 cup mushrooms
- 1/2 cup diced bell peppers
- 1 handful baby spinach
Directions:
- Bring water to a boil and cook ravioli according to instructions
- Drain and toss in 2 tbsp Bertolli extra virgin olive oil
- Add back into the pot, leave to the side.
- In a medium pan, heat up 2 tbsp Bertolli Extra Virgin Olive Oil with garlic
- Add in veggies and cook until soft
- Add veggies into the pot of ravioli and add a sprinkle of red pepper flakes
- Enjoy!
Fluffy Biscuits

Ingredients:
Fluffy Biscuits
- 2 cups gluten-free flour
- 2-3 tsp baking soda
- 1 tsp salt
- 1 1/4 cup greek yogurt
- 2-3 tbsp of Bertolli Extra Virgin Olive Oil
Directions:
- Combine dry ingredients in a bowl and mix well
- Add in wet ingredients and fold together until fully combined
- Roll out dough to about a 1/2 inch thick, and cut out biscuit rounds
- Place cut dough onto a lined baking sheet
- Bake in the oven for 12-15 minutes at 350 degrees. ⠀⠀
