Banana bread

Ingredients:

  • 3 ripe bananas
  • 3 large eggs
  • 3 tbsp honey
  • 1.69 fl oz Bertolli EVOO
  • 7.05 oz all-purpose flour
  • 2 tsp baking powder
  • 2 tsp ground cinnamon
  • ½ tsp salt
  • 2.82 oz dark chocolate, optional

Filling:

  • 2.03 fl oz Bertolli EVOO
  • ½ medium onion, finely chopped
  • 7.05 oz mushrooms, chopped
  • 2 boneless, skinless chicken breasts, chopped
  • 2 cups fresh spinach
  • 3 tbsp cream cheese
  • ¼ cup milk or plant-based milk
  • Salt and pepper to taste

Total time: 50 minutes

  1. Take the ingredients out of the fridge beforehand to bring them to room temperature.
  2. Preheat the oven to 180°C/356° with top and bottom heat.
  3. In a large bowl, mash the bananas with a fork.
  4. Add the eggs and beat with a manual or electric whisk. Then add the honey and beat again, followed by the oil x.
  5. Add the flour, baking powder, cinnamon, and salt. Mix until well combined.
  6. If desired, add the chocolate and mix gently with a spatula.
  7. Pour the batter into a medium-sized loaf pan (about 24×12 cm), either non-stick or lined with parchment paper. Decorate with more chocolate and banana slices if desired.
  8. Bake for 40 minutes. Remove from the oven, take out of the pan, and let cool completely before slicing.
