Banana Muffins with Bertolli Olive Oil

Banana Muffins

Ingredients:

Banana Muffins

  • 1/2 cup Bertolli Olive Oil
  • 2/3 cup brown sugar packed
  • 3 large mashed bananas
  • 2 eggs
  • 2 teaspoons of vanilla extract
  • 1 3/4 cups flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup of brown sugar to sprinkle on top

Directions:

  1. Mix all wet ingredients and brown sugar in one bowl
  2. In separate bowl mix flour, salt, and baking soda
  3. Mix both bowls together
  4. Spoon into 12 standard muffins
  5. Bake for 15-20 minutes

 

Lemon Orange Chia Seed Loaf with Bertolli Olive Oil

Lemon Orange Chia Seed Loaf

Ingredients:

Lemon Orange Chia Seed Loaf

Dry

  • 2 cups almond flour
  • 2 tbsp coconut flour
  • 1/3 cup tapioca flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • Zest of 1 lemon
  • Zest of 1 orange
  • 2 tbsp chia seeds
  • 1/4 tsp salt

Wet

  • 3 eggs
  • 4 tbsp honey
  • 2 tsp vanilla extract
  • Juice of 1 and a half lemons
  • Juice of 1 orange
  • 3 tbsp of Bertolli Extra Virgin Olive Oil

Honey lemon drizzle

  • 1/3 cup of plain unsweetened coconut yogurt
  • 2 tbsp honey
  • 2 tsp lemon juice

Directions:

  1. Preheat oven to 350 F and line a loaf pan with parchment paper
  2. Combine all dry ingredients into a medium bowl and set aside
  3. Mix together wet ingredients in a large bowl
  4. Slowly add in the dry mixture to wet and mix thoroughly
  5. Transfer to the loaf pan and bake for 50-55 minutes
  6. Halfway through cooking cover with foil so the lid does not burn
Olive Oil Bread with Bertolli Olive Oil

Olive Oil Bread

Ingredients:

Olive Oil Bread

  • 2 cups  of almond flour
  • 2 tsp of baking powder
  • 2 eggs
  • 1/4 cup of Bertolli Extra Virgin Olive Oil
  • pinch sea salt

Directions:

  1. Mix all ingredients until the batter becomes thick
  2. Roll into balls and flatten a little onto a baking tray
  3. Bake at 350 until they’ve risen and look golden brown
  4. Enjoy!
