BANANA BREAD
Banana bread
Ingredients:
- 3 ripe bananas
- 3 large eggs
- 3 tbsp honey
- 1.69 fl oz Bertolli EVOO
- 7.05 oz all-purpose flour
- 2 tsp baking powder
- 2 tsp ground cinnamon
- ½ tsp salt
- 2.82 oz dark chocolate, optional
Filling:
- 2.03 fl oz Bertolli EVOO
- ½ medium onion, finely chopped
- 7.05 oz mushrooms, chopped
- 2 boneless, skinless chicken breasts, chopped
- 2 cups fresh spinach
- 3 tbsp cream cheese
- ¼ cup milk or plant-based milk
- Salt and pepper to taste

Total time: 50 minutes
- Take the ingredients out of the fridge beforehand to bring them to room temperature.
- Preheat the oven to 180°C/356° with top and bottom heat.
- In a large bowl, mash the bananas with a fork.
- Add the eggs and beat with a manual or electric whisk. Then add the honey and beat again, followed by the oil x.
- Add the flour, baking powder, cinnamon, and salt. Mix until well combined.
- If desired, add the chocolate and mix gently with a spatula.
- Pour the batter into a medium-sized loaf pan (about 24×12 cm), either non-stick or lined with parchment paper. Decorate with more chocolate and banana slices if desired.
- Bake for 40 minutes. Remove from the oven, take out of the pan, and let cool completely before slicing.
